Is there a way to protect my plugin source code so no one can edit it ??

To answer your question no there isn't.

You are suppose to share source code for released plugins. If you see AMXX's mainpage you can understand why, someone put a backdoor into one of their own plugins.

Besides that why don't you want anyone editing your source code?

Actually, you're not supposed, but obrigated to distribute source code if you will make your plugin available to the public. All AMXX plugins are derived work of the software itself, then falling into the GPL license.
