Can someone explain to me how sourcebans works?

Player joins the server. The server checks the database to see if the player's steam I'd or IP have been banned. If so, the player isn't let into the server.

Will players banned before installing sourceban continue to be banned or will they be unbanned?

Depends, you would need to import the current/old banlist to sourcebans, otherwise they'll be unbanned.
