There are no security by obscurity.

Running things like the command line program "netstat" on those clients will still make them see the server IP that they are currently connected to.

If you really want obscurity; you can probably make a plugin that hijacks the "status" command and provides your own version of it, without listing the server IP address.

But it won't do any good for you at all in the end.

They can just see the server IP before they even join your server.
