SQL Connection Failed: [2059]: Authentication plugin 'caching_sha2_password' cannot be loaded: The specified module could not be found.

I guess this error is due to the new auth model in mysql 8.x

Is there a way to use the new mysql auth model in sourcemod, or do I have to revert back to native_password support (not recommended by the way)?

You need to use native_password, there are no plans to add caching_sha2_password support to SM's MySQL module currently.
