I'm about to rent a server, and put my hlds on it.
But I think the server runs linux, and I'm worried my plugins wont work on it.

Is there any way to know what will and will not work on linux?

It doesn't matter, your plugins should work.

Unless the plugin is using offsets(with the wrong extra offset) or orpheu/okapi with wrong linux symbols(really unlikely) then you should be fine.

I am using both orpheu/okapi, how do I know if I have the right offsets?

As I said, most likely it will work, given how easier is to get the linux symbol compared to the windows signature.
As a hint, look when the signatures were made/updated, if it's before 2013 then maybe it won't work, if it's after 2013 it's going to be fine.
