I want to know if this configuration can run 64 slot zombie escape + another 2-3 server 40-50 slots.

This depends on so many factors; Tickrate, plugins, etc. You'll probably lag your balls off with a 64 slot ZE server on a E3-1270v3, even only on 64t.

So E3-1270v3 is weaker to i7-6700K.

Yes, if you can, go with the 6700k (or even 7700k, has a bit higher frequency at 4.5Ghz)

The 6700K would be my choice.

2. It's not end of life

I don't think NFO even have any 6700 or 7700 on their page. Right now they are having a very very good sales on these old 1270 boxes.

No chance of i7 at NFO, only OVH but DDoS gaming it's just commercial, so know where i could get i7 in EU(Germany) and have effective ddos protection.

Germany? I would probably suggest pinging OVH's centers from multiple locations (e.g. your house, your friend's house, and so on), and find the "average" lowest ping OVH (be it GRA, SBG or RBX), and then select the best ping location at OVH for the game servers.

Alternative is more likely 5-10 times the price (if not more), if you need some real DDoS protection that are just close to be working.

You can get a lot of things across the world, but you'll never get 100% perfection, especially not at a price that gaming server operators find "affordable".

I heard the NFO have better DDoS protection but i dont like the configuration of servers.

There's someone else have game dedicated to OVH, i had until last year but it does not turn back because of DDoS

I thought OVH's ddos protection was supposedly good? Maybe it depends on location?
