If I'm putting a $100 bill on the street, how can I be sure you are the one receiving them / picking them up?
It is like a trust issue, if I cannot be 100% sure when I'm clicking Pay, that you are actually the one receiving the money as intended, I wouldn't ever move on.
If there's just a tiny piece of doubt, I'd stay away.

PayPal usually only gives first name, last name, email, and an unique account / payer id (quite similar to a Steam ID), and the country code of the country that payer has registered with.
... and of course, transaction details such as the amount, how big the payment fee is, unique transaction id, and other non-payer / non-receiver specific fields.
You (... or your shopping/donor system) can explicitly request more details such as for example shipping address (if necessary, to ship physical items), but if you (... or your shopping/donor system), you will typically only receive the above mentioned information.
