I need to attach a player entity to a prop_physics entity
Is there a way to do this?

It works with any prop_dynamic object, but if I replace it with !activator (player entity), it stops working

Not really, but if you find that you can't parent a player to an object (thus preventing the player from being able to use his controls like parenting should do in that case)

Then doing that might be an option, or it might not, depending on what you're doing.

You'd have to hide the actual player model itself though (transparency) / godmode it / noclip it (spies can't always have their clipping removed though).

try setting names on the entities instead (for players i used to use userids) and parent them that way, how you do that depends on what you're trying to do e.g if you only want to parent someone who presses use on the the prop then try sdkhooks use hook then parent. if you only want the player to move with the prop just try setting the moveparent instead of actually parenting.
