1) You need to run the plugin to get that to log since GoldSrc doesn't log it by default (see below)
2) You only need the one for your game. It gives the ability (by default, you can configure it differently) to print messages from the daemon to the server. It also generates additional log messages, such as headshot, since GoldSrc doesn't log everything that Source does.

That is what I said, no plugins for HL1DM it seems in the hlstatsx.zip

Which plugin do you mean all I see is:
