If you are using skin from store the database takes bit time to sync in so that gives the invisible look perhaps. MAYBE.

It's more likely the spectator issue like others said.

I don't have a any idea, why disabling this cvar hide your hands and guns ???

the problem was the halloween update in csgo in combination with custom skins on community servers. (for me)
