So when you stop pressing 'E' while defusing you continue to defuse for an extra second. Is there any way we can stop the defusing instantly?

Yes it's possible to do it,I've seen a 5 v 5 cs 1.6 server that looks like a cs go one with this feature,
Check this plugin,you can stop defusing with mouse 2

Well I am using this plugin and it also does exactly what I want.
