Hello guys im running a cs:go jailbreak server with 64 slots. Everything is fine when players are 30 or less. But when there are more than 35 players in server my sv and var values go yellow or red.
I did some digging but got nothing. I know my cpu can handle the server if i use more than 1 core. But How i do that?

My CPU: 2x Intel Xeon E5-5530
Ram: 24 GB
Operating System: CentOS

You can't.
Most SRCDS is single threaded and this won't change anytime soon.

I believe this is Linux related. With Windows and SRCDS I think multi-threading is supported and always on.

Clearly you have no idea what you're talking about.

(Words from BAILOPAN) Almost all source engine functions are not thread-safe, so srcds is programmed to run on one thread only. Most of the source engine is not prepared to handled race conditions, deadlocks, etc. Occasionally srcds might start off a second thread but I've only noticed this rarely, and at that point the server is lagging anyway.

The operating system's support of threading is irrelevant in this case (and both windows and linux support multithreading.) All server instructions are executed serially. You cannot change this, unless if you do Valve a favor and rewrite the entire source engine to support multiple threads.

To solve the OP's problems: Less CPUs (unless you run multiple servers - the general rule is 1 server per CPU core) and more clock speed is needed.

So what am i supposed to do now ? I bought the dedicated server cant run a single server because of the source engine. Just nice.

You can't switch to another CPU or change your server plan?

I wouldnt run more than 16-18 slots on Intel Xeon E5-5530.

You need to switch to a CPU with more performance per core. Ask your provider!

My host upgraded my cpu for free because they realised what they offered was a little slow for my needs.

New cpu they offered to me: Xeon E3-1230 v3
