How to change default knife to custom knife ?

Hello,
I'm setting up a Jailbreak server and i'd like to change the default knife to this custom punches: https://gamebanana.com/skins/145862

But i can't find a way ...
I'd like too to change the defaut player models randomly to a list, is there any way using sm_Skinchooser ?

Thank you, and about changing the default player models based on a random list ? is there any way with sm_Skinchooser ??
