I once saw a server running zombie plugin
it was like this :
1 human is turned to zombie and he need to infect all the other humans

my question is if you can have it like this on ZP
i didnt see this option in the readme so if it is available plz tell me how to use it

I'm gonna assume he's talking about the default gameplay mode where only 1 person is infected. And ya set the chance settings for all the other gameplay modes to 0 to guarantee it.
