I think "hud_draw 0" will remove it, not sure.

hud_draw 0 remove all hud, only voice is displayed (see screenshot).
For those who want to remove all amx text from a demo you must replace this TrackerScheme.res with the original. Remember to backup the original file (if you have it).

Does this work for hltv demos only can you remove any hid or scoreboard display on normal demos. I have a few in general recorded demos and wondering if anything can be removed or is everything final in an game demo once recorded?

I have a different but interesting issue. I played the game before in 16:10 aspect ratio and have FOV changer in my server at the time, so I changed the FOV to matched well with the aspect ratio and recorded some gameplay demos at the time. But now I'm playing in standard 4:3 aspect ratio, and viewing back the demos again in this aspect ratio makes the hand model more further-placing than the standard, replicating on my FOV increased before. Which now tells me that the in-game demo also saves whatever FOV you played with during in-game recording, which makes sense. Look at the images below for more:
