It really helps if you specify a game.
If it's TF2, there's 3 cvars that control sudden death:

- Restrict everyone to melee weapons only while in Sudden Death.
"mp_stalemate_timelimit" = "5" ( def. "240" )
game replicated
- Timelimit (in seconds) of the stalemate round.
"mp_stalemate_enable" = "1" ( def. "0" )
game notify
- Enable/Disable stalemate mode.
Note that "Stalemate" is actually referring to Sudden Death... this is likely because Valve originally referred to it as Stalemate, but then they changed its name but not the cvar names.
Incidentally, I need to figure out why Sudden Death is enabled on my Prop Hunt server...
