I am moving my plugins to another server and putting all the .smx files into my plugins folder. I am just curious do I also need to move my .sp files as well?

If not, what is the purpose of having the .sp files in the scripting folder?

The .sp files contain the source code for plugins. They allow you to recompile plugins locally, so you can make personal changes to them that are tailored to your server's setup/environment. It's good to always keep source code handy in case you want to refer to them later or learn how they work.
