my server have may plugins,

some time Server will Crash

just some time,i don't konw which plugins error

any plugins can logs Server Crash

I'm not sure, but I think that you need to add the word debug after the suspected plugins.
also, check your amxx.cfg.

i konw that,but some time is maps problem,i don't konw which maps
so i need logs Server Crash,not just plugins and maps,need logs all

Some crashes cannot be logged by AMX Mod X because AMX Mod X is not running when they happen (because the whole server crashes). Look at the console log when it has crashed and see what the error is and then we can tell you if it's possible or not.
