Hey guys,

So I have a 1core VPS and it's running smoothly. However, I'd like to double the slots and I would need to get a more powerful VPS. If I get a second core will it help? Or is SRCDS not muti-threaded?

I don't know about CS:GO in particular. But SRCDS' main world thread is single-threaded.

A second core may help run the OS tasks if your current CS:GO server is maxing out the one core you have.

Well then how in the world are people running huge ass servers? Do they have one really beefy core?

Well I bet they don't run their servers on a vps. A dedicated system is more powerful for these servers

That depends on what kind of a CPU you're put on. Most virtual solutions don't have all that much overhead nowadays.
