They're in the .vpk files, the new models are in some kind of /legacy/ directory.

Hey, first of all sorry since I havent done any researches yet but just a fast question... will this plugin change the hands of the player? since in csgo each player model has a different hands model

No this doesn't even change the player's model, it just overlays a skin onto the player and make their original player model invisible.
