Hello together, it's 2023, we have a 4800€ server and a 32 slot in csgo server.

When there are for example 5v5 the sv is 1-4 and var 0.0010 ms, but when more players join maybe 27 players the sv is 12-17 and var 1.122 ms. Some friends told us that the plugins may be the fault. The server is connected to a 10 Gbps ethernet.

Does anyone have a answer to this problem?

You neglected really the most important thing, what processor is it being run on? List the actual hardware you have not the price tag.
$4800 is a cheap enterprise processor that won't do you any good if the base clock is low.

Oddly enough I just E-Wasted 20 of these servers this past month, so I am familiar with them. Skylake is old and we're getting rid of anything from that era.

Make sure you set the profile to HPC (High performance compute) and your power profile to performance as well, either through the BIOS or OneView if you use that as your manager.

Beyond that, I imagine you're running these at 128 tick, and if so, what you're describing is par for the course if it's on Windows. Should be able to squeeze some more on Debian or a variant with tuned and a better kernel.

How many servers of 32 are you running and is there any other services?
