Is there any way to disable the bloody screen when you are a zombie?

Press the night vision key (N). To permanently disable it, set overlay_path to "" in all zombie classes.

i am very new to all this zombie mod stuff but what folder/file do I go to do this?

Yep, try going here: cstrike/addons/sourcemod/configs/zr and choose your playerclasses.txt and set the value as Richard has suggested above against all your Zombie classes in that .txt file, then Save & Close it.

Reboot your server or let a map change go by, and your No Blood Vision becomes a permanent fixture.
