I have a question with the versions of SM & MM Windows and Linux.

I can leave both configured in the same game mode in case you change the OS just send the files, without having to do everything in the case.

Example, download the Windows and Linux versions of SM and MM, configure the plugins, configure the complete server.

If you want to start on Windows only send, if you want to switch to Linux then just send to a dedicated Linux in this case, without having to configure the plugins and tals all over again.

Would it be possible? Or the files for each OS replace each other?

You can safely use your merged build. They will not conflict. Windows use .dll, Linus - so.
Configuration files are identical, and smx is cross-platform.

Perfect, I did it, but now my server doesn't turn on at all.

Server console log only shows this:
Attachment 185450

Attachment 185451

Attachment 185452

Attachment 185453

I did not make any changes, except to update SM & MM to the latest stable versions.

You did what... I didn't tell you about mixing different sm versions.

Anyway, replacing sm 1.10 > 1.11 should be fine too.
I just right now did a direct replacement for my experiments and everything fine.

You might have some incompatible extensions or something else.
I would totally remove server files and install sm v.1.11 from the scratch.
After that, I would install custom plugins/extensions in small portions observing each time is everything fine.

Alternatively, use Accelerator to try understand the reason.
Error logs might also help.

BTW, I see some permission issues in your log.
Perhaps, environment setup is not correct. Some more knowledgeable Linux guy might help you.
Personally, I'm using LinuxGSM scripts and directly follow installation instructions on their site.

Thanks for the information... I found the problem, it was an outdated gamedata, fix it and the problem was solved.
