Sometimes servers are unable to run maps due to the ~900 edict limit. What's the ideal entity count you should stick to, to ensure your map will run on most modded servers nowadays? Is 200 too much?

There is not going to be any known value for your question. Obviously lower is better. Look at other popular maps to get an idea of what people are actually running.
