I have two models called hand and arms:

PHP Code:
hand_zombie_normalhost.mdl 
and

PHP Code:
walker_arms.mdl 
Only hand model have support for remove weapon, but i have one question:

Remove weapon on viewmodel break valve rules?

I don't think removing the weapon viewmodel is breaking Valve's rules however if you were to use this to give players premium items like golden frying pan or some other rares items, this would definitly be against Valves rules but I don't think this poses a problem to you since you only want to change a model and I don't think this would break Valve's rules as long as it doesn't exist in-game and is a premium item.
