I usually recommend to use linux for CS:GO servers but considering your non existing experience with linux I would highly recommend you to stick with windows for now.

For me, Linux CS:GO server is good for competitive server. If you want to host more than 10 slots/instance, you may want to use Windows. Currently, I'm hosting a Windows CSGO server with 10 instances, it is still good when my server handling more than 150 players
