But then I just upgraded to a most awesome Moto Droid.
Sadly I've not been able to find a way to root 2.1 (not that I've looked in the last month).

I upgraded to a Droid from an Alias too (not two)

Follow the instructions step-by-step and you will have no problems rooting and installing ROMs on your Droid; I recently rooted\ROM'd my 2.1 Droid with these instructions. I also recommend taking a look at LauncherPro. Let me know if you have any problems\questions.
