I would wait for the update to hit first, update your servers, and THEN update SM & MM all together.

It looks like not much is going to break in the way of SM itself. TF2_DisguisePlayer won't work on Windows servers without updated gamedata (which will be ready closer to the update), and a new TF2Items build will be needed for any server running that.

I saw asherkin pushed new gamedata for TF2_DisguisePlayer to the master branch this morning. I assume this isn't on the updater yet?

(I had created a new branch from upstream master and happened to glance at the commit log)

I think only TF2Items will break.

I will wait for stable releases before update SM && MM on my servers, and disable TF2Items for a while.

Pretty sure when you contract with any big gaming company you can be called in at any time. How ever not too sure about they holidays, especially since it's the fourth and possible drinking will occur.

With the master branch updated, can we update to the latest snapshot ahead of time and be ready for the update?

The only change is to gamedata, it'll be pulled down automatically by the gamedata updater once it is deployed.
