Is it possible to make a player see all other players like zoombies for example, but the others seeing each other normaly?

I would say not, this question has been brought up before.
(It would have to be done client-side)

It's possible. Hook FM_AddToFullPack and add/remove to/from ES_Effects EntityState member value EF_NODRAW flag depending on whether you want to hide/show the the given player from/to a player who is recieve the given data.

I know you can make certain players invisible to certain other players by this method.

Example:

However, can you have one player seeing everyone else as chickens or zombies while all the other players see everybody's normal models?

I'd say try using ES_ModelIndex. You can get the model index from the return value of precache_model.
