Wait... AK is a grenade?
Anyway, I want to help but can't right now so I just leave this if someone have time to do it or the OP do it himself/herself.
1. Set a var/bitvar at Event_CurWeapon to check if player currently holding the VIP AK when he got it.
2. At fw_SetModel, set an UniqueID to the AK (usually people save it in pev_impulse) and remove the var/bitvar above to notice that player no long have VIP AK
3. Force drop the VIP AK before getting the Paladin
4. Use Ham_Item_AddToPlayer to get the UniqueID to check it is the VIP AK, if yes, set the var/bitvar at #1 to make player have VIP AK again.
At the Ham_Item_AddToPlayer, check player Admin Flag there, if it is not VIP then don't set var/bitvar.
