Send me a PM with your error logs (addons/sourcemod/logs/errors_XXXXX.log) and see if you find something related with these words: [Models], [Downloads] and [Playerclasses]. This should be the problems related to the crashes (at leas with models it is).

just disable 5 plugins and test. does it crash still? re-enable them and disable 5 more. Do this till it stops crashing. then re-enable one by one the plugins. at one point the server will crash. there you found the plugin.

Removed two zombie skins and no crash server
