Is there anyone on here that would be willing to help learn about sourcemod and set up servers and what not?

After setting up your Server, this link teaches you set up metamod and this link teaches you how to install sourcemod.

If you are able to read and follow instructions, then setting up your first server will be no problem. You always get better by doing stuff and by reading. Try to read the whole wiki für SM and you will be fine

I have everything up and running and installed the way I like it, however when the winner of the gungame gets he or she's knife the server doesn't change the map to the one everyone picked? Any thoughts?

You need to remove nextmap.smx from the addons/sourcemod/plugins folder. Just move it to the disabled folder if you want but it has known issues with CSGO.
