In PropHunt Redux, I change the weapon index to a different one in TF2Items_OnGiveNamedItem* and strip all its attributes.
*Actually, PropHunt Redux has been updated to not change weapon indexes. Instead, it just blocks the item entirely and builds a new one in post_inventory_application. This is to prevent client animation issues that popped up with the Medic bonesaws when you changed the item... basically, you appeared to continually switch to the weapon (including the sound) when it was out. I wasn't sure if other weapons would have similar issues or not, hence the change.
