I fixed that problem.
One plugin was "bugged" he is configured to start a text file, read it, and close it.

Problem was he started file, read it, and didnt close, and after much map changes server was overflooded with that file process and couldnt load anthing else.

I fixed that plugin and now it's working 5 days in a row without a single crash
