You can enable server logs if you want events to be logged (this is how most stats addons get most of their info; they sometimes also have an extra plugin that adds more info). To enable HLDS logging, put "log on" in your server.cfg.

If you want more info in the logs you can set the value of mp_logdetail.

You can search this for an idea of what things might be available. Otherwise, if you know that a certain stats addon has the information you need, look at the setup procedures for that, it will tell you how to set up your server to generate proper logs for its functionality.
