I tried to download 740 ('update_app 740 -beta csgo_demo_viewer validate') in the hope I could achieve the same results as yourself, but alas when I try to run the server it gives me the out of date message...
I think for my aims I might just try with Counter Strike: Source (and wait for CS2 to have dedicated servers and scripting abilities).
