My servers still crash, and the log files are just empty/dont give me any info on whats causing it. Have i missed anything or forgot anything? Ive updated the servers with SteamCMD and changed back...

Dont think you can do so all admins are auto full xp, In that case you have to give to them one by one when they are online.
