Ok, so it's clear that we can give players guns, nades and ammo (& so on), but it's not really clear to me if I can give a player defalut knife (weapon_knife), without any skins or what ever?

Not really, but they can hook events of giving player any item or changing its props.
Anyways, they could have blocked those featured, instead of banning so many people and forcing them to buy...
