It does work, the crashes are caused by using incorrect spawn weapons (like weapon_usp, generally an incorrect name is ignored but there's some issue related to it as this weapon and some others did...

It is an SMX file, you went to the right folder, the full filename including suffix is "lastrequest_fruitninja.smx" you should find it there and delete it or move it to the Disabled folder inside...

Confirm that you have installed everything correctly, also try running SM_Hosties without any additional plugins on the server but the sourcemod's base ones, plugins may conflict and cause crash.

You didn't install sm_hosties, you installed its third-party lastrequests, to have them you have to install sm_hosties too.
The error log you gave is not related to sm_hosties.

There are convars to change the overlays, modifying teamoverlay.sp requires sm_hosties recompiling and also removing the sm_hosties config to let it generate the config again with the new settings....

The convar is working correctly, if the line you mentioned at start that shows the max value as 1 is from your config, it means you didn't update the config file, the code limits it to 3, you can see...
