Sorry about that! Client-side lag should be to an absolute minimum, so if it client-side FPS you are referring too, it's really only a few extra particles and decals.

Are you using 1.1+? In 1.0, any melee'd object would bleed. It should now check to make sure it's an infected or a player.
As for random bleeding, it might be the periodic bleeding as a result of...

You can change the values by editing the gore_config.txt
