Is it possible to blow zombies head's off after a few shoot's in the head like in zombie mod ?

Not yet.

I wanna add a feature to allow you to do what you said and the zombie continues like normal. And also a feature that sets their view to the decapitated head and the zombie runs around blindly. This would be fun but not as common as it would only happen when the zombie has a hopelessly low HP.

you could just do the decapitation by yourself, as it's not officialy implemented yet. just hook player_hurt, check if the head is hit, spawn a head at the head position, give it some speed and set a headless model to the player.
