I believe the Sentry Fun plugin actually destroys the sentries then spawns a new one of the opposite team in its place. I don't think it's possible to change a sentry's team any other way, but I could be wrong.

You would probably just need to use the SetTeam input on it(and skin if you want it to look like an enemy sentry)

Yes, I just don't know how the engine would handle an engineer owning a sentry of the opposite team, especially when attributing kills.
